Easy Refrigerator Pickles




Ingredients

  • 3 cups thinly sliced pickling cucumbers (about 2 pounds)

  • 1 cups thinly sliced onion

  • 1 ½ cups white vinegar

  • ¾ cup sugar

  • ¾ teaspoon salt

  • 1TBSP of pickling spice per quart jar

Directions

  • Step 1 Place cucumber in quart size jars; top with 1 cup onion.

  • Step 2 Combine vinegar and sugar in a small saucepan; stir well. Bring to a boil; make sure the sugar has dissolved. Cook 1 minute. Pour over cucumber mixture; Add 1 tbsp of pickling spice per quart jar. Let cool. Add jar lids and chill at least 4 days.

  • Step 3 Note: Pickles may be stored in the refrigerator for up to one month
