Ingredients
3 cups thinly sliced pickling cucumbers (about 2 pounds)
1 cups thinly sliced onion
1 ½ cups white vinegar
¾ cup sugar
¾ teaspoon salt
1TBSP of pickling spice per quart jar
Directions
Step 1 Place cucumber in quart size jars; top with 1 cup onion.
Step 2 Combine vinegar and sugar in a small saucepan; stir well. Bring to a boil; make sure the sugar has dissolved. Cook 1 minute. Pour over cucumber mixture; Add 1 tbsp of pickling spice per quart jar. Let cool. Add jar lids and chill at least 4 days.
Step 3 Note: Pickles may be stored in the refrigerator for up to one month
